So with all that tuning YOU do .. Why not tell us what you would do with the PV to increase his MPG. Sounds likes you have it figured out tuning wise..  54 MPG   is unbelievable fuel mileage This OP has no sloppy Joe PC tune going on ..

 PV is a extremely powerful tuning tool. I am sure you have tuned 100+ bikes with that tuner at this point right?

US Border Patrol Agent that has one of our hand-built 124"ers/Baker OD 6, 2003 Softail, 130/90/16 tire(why I do not know ?)that reported that he has seen up to 54 mpg, to us, after he had that one tuned at Thayers Sales & Service, Corfu, NY.
Didn't tune it, only built it, and only alerting as to what was told to us, by a VERY credible gentleman.
Can I step down from the witness stand now................. ???

I'll add that when a powerplant has a large amount of volumetric efficiency going for it, it DOES NOT need to gobble down large amounts of fuel to perform even more work, than a powerplant of the same size that is lacking in great VE. Car, truck, motorcycle, etc, etc.
If all the well-informed googlemiester naysayers already know this, then only one thing is going on......... ;)

I'm not doubting you or your customer Scott, just stating that if my bike was getting 54 MPG i'd be concerned it's to lean.  I', in no way criticizing you, your build, your customer or his tuner.  If all involved are happy then good on ya.

I've "seen" 50+ mpg on a tankful with my 120 motor running a Rev Perf EMS - riding two up pulling the Bushtec.  On the perfect day, perfect temperature, perfect altitude, cruising along the Colorado River in Utah at around 45 - 55 mph.  My riding buddy also saw 50+ mpg with his 103 right along with me.  But typical mileage for us both for the entire 6000 mile trip was 38 to 42 mpg when traveling, two up with the Bushtec in tow.    :nixweiss:

More than anyone I may have ever noticed you brag on other's efforts to (ostensibly) represent your work.  Joe's tuning, someone's else's ride, some other person's idea(s) that are represented as being applications of (presumably) your work.  Dude, share what you do, to completion, with documented support where it's appropriate.  The rest, if for some gawd forsaken reason you've still not figured it out, is just bupkus and it makes you look like you're trying too hard.

Again, I'm not criticizing you, your customer or his tuner. I just stated that if my bike got that good of fuel mileage I would not be happy. I'd prefer a tad richer.  No need to get all defensive about it.  Besides, I never said anything about the tune.  Since you've "owned and tuned with a dyno for 20 years" you should know that many things other than a tune can cause lean conditions.
