Since nobody's chimed in yet, I'll play. Please don't take this as gospel, but I've heard from some folks in the past when I was researching for my first Harley, that if you make the bike exhale easier (eg., new mufflers) , you need to add more fuel with some sort of fuel management system, as easier "exhalation" can make the bike run leaner, which means it could run hotter. Which means more wear on the engine, etc. And as far as I know, Harleys were setup to run lean anyway for emissions, now whether or not that's still true, I don't know.
You would still be choking off your exhalation with your cat systems in the headers, though, so maybe it's a wash?
Again, I'd listen to the pros that know on this site before I'd take my word as the definitive answer. Also, have you called V&H and asked them about it? (You'll notice I never mentioned talking to a dealer...you'd get a different answer from each one you talked to, I'm afraid!
