Borrow or buy a real certified mechanics oil pressure gauge and tap into the case where the sending unit for the dash gauge is installed. Even better, use a T fitting so you can have the real gauge operating at the same time as the dash gauge, then compare the two as you operate the bike. You may find the stock gauge or sending unit isn't very accurate (gasp!).
Hot idle pressure usually is in the 8 - 12 psi range, depending on actual oil temp and oil viscosity, and on a system that's working well the pressure should jump up almost immediately as you come up off idle. At 2000 rpm mine has reached mid scale of the dash gauge, which is approximately 32 psi. Accelerate smoothly until you exceed 4000 rpm and you may notice the pressure increases a bit more as the pump output exceeds the ability of the bypass to regulate it. That's not an issue unless it becomes excessive, which could mean the bypass valve is stuck or sticking.
Btw, Harley only lists one specification for oil pressure on the CVO 103's and it's 30 - 38 psi @ 2000 rpm and normal operating temperature (230° F).
