When you say you have an '06 Ultra I am assuming that it is a CVO with the 103" motor. Correct me if I'm wrong. You also say that you have slipon mufflers but you didn't say which slipons. Please let me know what you have on now.
I also have a '06 SE Ultra with V&H true duals, high flow air filter and a PowerCommander. Over the past 2 years I have probably tried more sets of mufflers on my bike than anyone on this site. You sound exactly like me and lot of others riders that would like something louder than stock but not as loud as many of the aftermarket mufflers. I have yet to find that perfect muffler. Here's a list of the mufflers I've tried. I either didn't like the sound or they were too loud. The loudest by far were the Hookers.

V&H Ovals
V&H Monster Ovals
Of the above, the V&H Ovals and Monster Ovals were the best sounding. However, after long rides I still came home feeling that they were both too loud. The Monsters have a very nice low rumble but I have found that once I get close to 3,000 rpms that they seem to get louder and actually cause an exhaust vibration.
If I had to do it over again I'm not sure I would put on the V&H true duals. Think I'd stay with the stock header pipes. I still have my stock head pipes but really don't want to go through the hassle of putting them back on. I have purchased another set of stock CVO muffs which I plan to core out the cats and give them a try. I wish I had an answer for you but the quest continues. Sound is so subjective to the individual rider that it is difficult for someone to recommend a particular set for you. What someone else may think sound great may sound like crap to you. What someone else thinks is quiet may be way to loud for you.
If you end up going with V&H Ovals or the Monster Ovals I have a great PowerCommander Advanced Map for you. It would save you the cost of a dyno tune.
