Floor Boards are the ones that were stock on the '03 ultra (the big ones), the chrome covers, and the chrome brackets.  Only adjustment I know of is the 3 (or 4?) mounting hole positions where they bolt on.  I think they will fit on the newer bikes.

The oil temp dispstick is only compatible with up to the 07 models I think.  After that they came out with a different one.  I can get the part numbers for all that if you need 'em.  I'll have to put together all the HD numbers eventually anyways.

The transmission was installed in my bike during a major upgrade.  There was no problem with the transmission but I found out later the builder used my old shifter pawl for some reason and sometimes it would drop out of gear.  I got fed up with the original mech, took it to another mech.  He was wary of working on someone else's build so I told him to install a Baker DDR6 I got for a good price at a swap meet while he had it all apart.  He inspected the HD 6sp tranny and said it was in perfect shape, except for the pawl.  Go figure.
