I am 6' 4" and don't really notice anything with the wind due to my height with the stock set-up on my 2012 CVO Ultra.
However, what I do notice is a VERY significant "softness" in the front end at highway speeds just like you described. We ride 2-up probably 98% of the time and the bike is very well behaved at all speeds, and all road/traffic conditions. But coming home alone after the 1,000 mile service, I accelerated onto the highway and quickly got up to about 70 where I nearly sh%t myself because the bike felt very unstable and felt like it was going to go into a high-speed wobble. Backed it down and it was much better at slower speeds. Rode later that day with the wife and it was stable at the same speeds where I felt uncomfortable before. Tried it again solo and it was all over the place. Dealer has been all through it, but says it is all "within spec". We went from a 2007 Ultra to this bike, and in 30,000+ miles on the 2007 never had an issue like this. For now we are chalking it up to the differences between the two model years (new frame, wider tires, nitrogen, etc). I really don't like it, but since we almost never ride solo, and it is fine with both of us on the bike, it is ok for now.
