I agree about the pricing on the '07 SERK, it's probably a few thousand too high.
I had an '08 SERK Annie and it was a pretty good short trip bike for the wife and I. At the time I weighed in at around 270# and my wife was in the 180# range. Although the air shocks were junk, still are for that matter, it was a good rider.
I traded it in five years ago and the dealership sold it for $22,500 and it only had around 12k miles on it.
The '07 does not have ABS, 6 gal tank or throttle by wire that the '08 had. I traded in on a '09 SERG O/B and it's a better ride than the SERK ever was.
I've heard that the Softails have very little travel on the swingarm and for your riding I would think any touring frame bike would be better. I would look for an '09 and newer. You don't have to go the CVO route to get a great touring bike used, but with the CVO you do get some added bling and in all cases you get a larger motor than the stock bikes of the same year.
I would not be too eager on an '07 SERK simply because all the time I was waiting for my '08 to arrive, all I did was read of all the issues the early '08s had as well as most all '07s. I'm sure that the bike you're looking at has had the revisions necessary, but the '08 will give you more for your money and an '09 will be just that much better with the frame design.
