EFI to Carb conversion

Got a preety good miss around 3000 RPM. Turns out my bike has ported heads by Radar of S&S fame, a bigger camshaft and High Compression Pistons. The bike is a reall runner, and the hottest bagger I have owned. I love Carburated Machines. I would have this lean-miss long gone by now. I am very familiar with the following carbs, and have worked on, installed and tuned them - The S&S E and G, The Harley CV and the Mikuni......
I want to convert to a carb, as I intend to do all my own work on this bike. I need some guidance here about wiring harness, petcock conversion crusie control etc..... Anyone here o nthe forum done one of thes conversions? Is ther any good reason not to do this conversion?? I love this forum. it has been way helpful. Thanks!!!!

All additional posts on this subject can be made here - converting from EFI To a carb..... in the Intake/Exhaust/ECM board.
